HTN have successfully employed, mentored and supported more than 12,000 apprentice chefs to date so we are very well positioned to provide a proven, specialist mentoring service to apprentice chefs employed across NSW and the ACT. This will be experienced Chef Mentors providing onsite support and industry advice to apprentice chefs in order to improve the apprenticeship completion rates associated with the hospitality industry.

WHO IS ELIGIBLE?

Australian Apprentices undertaking a Certificate III in Commercial Cookery Apprenticeship who are within the first two years of their training.

HAVE YOUR OWN DEDICATED CULINARY MENTOR!

The Industry Specialist Mentoring for Australian Apprentices (ISMAA) program is an Australian Government initiative that will provide intensive support to Apprentices in the first two years of apprenticeship training. Through the ISMAA program, Australian Apprentices completing an apprenticeship in Certificate III in Commercial Cookery will be provided regular one on one contact with highly skilled mentors who have years of industry experience.

  • An individual Mentoring Plan will be developed with you to support your training.

SUGGESTED MENTOR SESSIONS FOR YOU AS AN APPRENTICE

Below are some of the topic areas we can assist with so please use this as a guide to help with ideas as to how we can help. We offer this in 4 sessions per year, at a venue and time designed to suit you.

• Overview of being a chef in the hospitality industry – What to expect, what can you expect

• How to succeed in the industry as an apprentice – What is an employer after in an apprentice

• Setting goals and holding yourself accountable – Goals in your apprenticeship and life in general, be responsible for your actions

• What is a training plan and what does it mean – It is important to know how your training is managed

• Help with cakes pastries and bread – Need help with theory or some practical assistance

• Help with eggs, vegetable, farinaceous and fruit– Need help with theory or some practical assistance

• Producing meat dishes – Need help with theory or some practical assistance

• Producing poultry dishes – Need help with theory or some practical assistance

• Knife skills –  The cornerstone skill you will use every day in industry
