The annual Hunter TAFE Ourimbah Campus Cook-off in memory of Leo Gerrets

1st, 2nd, 3rd Year Apprentice Chefs

Date: Tuesday 24th November 2015

Registration: 8:30am – Start Time: 9.00am Sharp

All competitors need to do is enter, come along and bring your culinary skills and taste buds. Competitors will be required to design a main and dessert from the ingredients on the list for their category prior to the day and choose other ingredients from the common table on the day of competition. Two plates of each course to be presented. One for tasting and the other for display purposes. Competitors will be allowed to bring recipes with them and basic stocks (no finished sauces). TAFE plates will be available for all competitors to use or you may bring your own.

Every competitor will receive a tray of fresh food from the category list. From here competitors will be allocated 15 minutes to write their menu on the display card and order equipment. Cooking commences at 9:30am and times for service are below.

Main course service time, between 12:00pm – 12:15pm.

Dessert course service time, between 12:45pm – 1:00pm.

Presentation of awards will commence shortly after desserts

Taste, contrast, textures & balance will be the key to unlocking this exciting competition. Remember all aspects of hygiene must be adhered to at all times.

Competition will be judged by industry experts. Judges decision is final.

Good luck, keep smiling and most of all have fun. This competition is open to the first 34 entries; any further entries will be placed on the reserves list. So be quick.

HTN Inter Schools Culinary Challenge Winners (3rd Heat)

The third heat of the HTN Inter Schools Culinary Challenge was held on 18th June 2015 at Loyola Trade Training Centre.

On the day 8 competing teams were required to replicate a dish demonstrated by presenting Chef Michael Lopez being Spatchcock presented with potato lyonnaise, creamed spinach and roast dutch carrots.

Congratulations to the following winners on the day:

  • 1st Place – Joshua Maher and Kien Tam Sylvia Nguyen from Westfield Sports High School (pictured in the photo above)
  • 2nd Place – Awa Love and Sudjai Phaittasong from Evans High School
  • 3rd Place – Tara Mulligan and Amy Freitas from Loyola Trade Training Centre

HTN and Futura APPRENTICE CHEF CULINARY COMPETITION – Registrations open now

Registrations are now being accepted for the  HTN and Futura Apprentice Chef Culinary Competition, Australia’s largest annual competition series for future chefs with regional heats held throughout NSW and ACT.

This competition provides an ideal opportunity for cookery apprentices and trainees to engage in structured skill development. The competition is very inspirational ­and will undoubtedly enhance attendees’ passion for the culinary arts and the possibilities within the culinary career!

This is a great opportunity to network, form long lasting friendships with other like minded people and to display your individual culinary talent.

Winners at each heat receive cash and great industry prizes while the best performing HTN Apprentice Chef across all heats will be provided a unique 2 day paid work experience opportunity with renowned Chef Shannon Bennett at Vue de Monde in Melbourne. This experience includes airfares and accommodation.

HTN Inter Schools CULINARY CHALLENGE – Registrations now accepted

Registrations are now being accepted for the annual HTN Inter Schools Culinary Challenge. This Challenge is held throughout NSW and will see Hospitality students represent their local high schools.

In previous years students were required to prepare and present pan fried lamb rump with ratatouille, black olive tapenade and basil oil, which were demonstrated by a local, leading Chef on the day.

The key focus of this event is on “technical skill” and the ability to present a dish as shown on the day for a panel of industry judges. The winning team will walk away with cash prizes with thanks to our corporate sponsors.

The HTN Inter Schools Culinary Challenge is coordinated to highlight careers in Commercial Cookery and to showcase the culinary skills of students studying hospitality in high school as well as learn some tricks from a leading local Chef.

As part of the 2014 HTN Apprentice Chef Culinary Competition HTN Graduate Regie Soriano won a 2 day paid work experience at Vue de Monde in Melbourne.

To experience the opportunity of working with renowned Chef Shannon Bennett, Regie competed against other HTN Apprentice Chefs throughout the 2014 regional heats and was the highest overall scoring and best performing apprentice in the competition series.

The 6th heat of the HTN Apprentice Chef Culinary Competition was held on 3rd September 2014 at TAFE NSW Sydney Institute – Ultimo College (pictured).

This fantastic series is open to all apprentice chefs and is designed to give participants the opportunity to compete in a relaxed environment whilst demonstrating their skills and learning from others.  

The HTN Apprentice Chef Culinary Competition is Australia’s largest competition series annually for future chefs with regional heats held throughout NSW.

This competition provides an ideal opportunity for cooking apprentices and trainees to engage in structured skill development, further enhance their unmistakable passion for the culinary art and celebrate the excellence of cookery as a career without limits.  It also provides an opportunity for apprentices and trainees to network, form long lasting friendships with other like minded people and to display their individual culinary talent.
